It seems like forever since I’ve connected with all of you, I missed you guys. I’ve been nursing myself back to health, I still have some mild pain but nothing I can’t handle. I might have to have surgery which isn’t the scary part, the scary part is not being able to exercise. Sweating is a drug to me and the potential of being on bed rest terrifies me. Hopefully surgery isn’t required, fingers and toes crossed.
I’m enjoying these shorter posts, they are easier to write, making me get to the point quick, fast and in a hurry. I decided to host a Mother’s day brunch this year. I wanted to invite a lot of people but since I’m still not 100% better it’s only going to be My Mother, Tony and me, which will be a great time. I suggested brunch, then a fun art project and dinner. My Mom suggested a movie but I would rather do something artistic, then she went on and on how her art project isn’t going to turn out good, blah blah blah blah. Why are people concerned about how ‘good’ their art looks! It’s not the destination it’s the journey. I think it’s time Mom and I create some art together, it should be a great experience for both of us. I’m hoping to inspire her to get creative more often.
While redesigning the site I noticed I don’t post many breakfast recipes. That has to change since breakfast is my favorite meal of the day. I’ve seen these cloud eggs on pinterest and instagram for the past few months, it’s finally time for me to create this heavenly fluffy looking dish. Enjoy!
salt & pepper to taste
2 tbsp grated parmesan cheese (optional)
Preheat oven to 450 F
Place oven rack in middle
Line cookie sheet with parchment paper
Separate egg yolks from white
Beat egg whites with hand or standing mixer until fluffy
Spoon mixture on to lined cookie sheet
Add egg yolks to enter of egg whites
Bake at 450 for 10 minutes or until egg whites are golden brown and yolk sets
Season with salt & pepper
Sprinkle parmesan cheese (optional)
